An Insight to Soybean Denaturing Process
Abstract
This paper gives the overview of the research in soybean processing & denaturing to remove beany flavours.
Soybean with its high nutritional values shows enough potential for health applications and the rising processing
technological implications have boosted industrial advancements in soybean treatments. Increasing growth rate of 5-6% for
globally shows cumulative spurge of production and gives impetus to re promise investments in soybean processing. Also
current stability in processing further culminates creative application to process developments. Discussion about initial
treatments like degumming and denaturing are included followed by the need to exercise soybean processing at a larger scale
with definite framework. Increasing burden on dairy industry can also be considered as driving force to give heed to soybean
processing.
