Abstract : This research aims to study the production system and to assess the potential of “E-San food”. Data gathering form 3 types of food product manufacturers: rock salt, chili paste, and processed fish, totaling 31manufacturers and 385consumers by structured interview form, potential assessment form, and questionnaire. The results found that: the production system of “E-San food” almost of manufacturers owning their area for producing, produce by themselves, and owner's capital. The main raw material used for food production is raw materials that are generally sold. Including tools for food production as household equipment except salt production with specialized machine, tools, and equipment. All of food manufacturers control quality of production by themselves. In sales aspect, manufacturers have both retail and wholesale sales, sell by themselves and customers come to buy at the production place. Assessment the potential of “E-San food” found that: overall of the production potential is moderate. When considering each aspect, it was found that product and community strength aspect, and the marketing and product background aspect were low level of production potential. The product quality characteristics aspect has high level of production potential. Keywords - Production System, Production Potential, Food Products, E-San Food
